Cheese steak & pumpkin puree wrap

This pumpkin infused meal marks the changing of the seasons

1 small pumpkin

Bag of kale

Box of mushroons

Pack of cheese steaks

Vegetable stock

Salt & pepper

Chilli & garlic (optional)

Pack of tortilla wraps

 

To make pumpkin purée, cut the pumpkin into wedges and roast (approx. half) in the oven. Season with salt & pepper, add chilli and garlic if desired for extra flavour.

After 30 mins in a hot oven, scrape the pumpkin flesh away from the skin and put into a blender.

Add some stock and blitz. Continue to add the stock until the mix has turned into a thick puree.

Check for seasoning and adjust if necessary.

Cook the cheese steaks

Sauté the mushrooms and kale

Spread your tortilla wrap with some delicious roasted pumpkin purée and cooked cheese steaks cut into strips, sautéed mushrooms and kale, then roll it up and enjoy!
