Alfresco Spicy Halloumi Fries with Chickpea and Lentil Salad

Ingredients

  • Alfresco Spicy Halloumi Fries
  • x2 (400g) can chickpeas, drained and rinsed
  • x1 medium cucumber
  • 1/2 red onion
  • x100 g chopped kalamata olives
  • FOR THE LEMON-PARSLEY VINAIGRETTE
  • 120 ml extra-virgin olive oil
  • 60 ml white wine vinegar
  • 1 tbsp. lemon juice
  • 1 tbsp. freshly chopped parsley
  • 1/4 tsp. chilli flakes
  • Salt and pepper

METHOD

  1. Remove the packaging from the Alfresco Spicy Halloumi Fries. Sprinkle the sachet of seasoning provided and toss until each piece is coated.
  2. Heat 1 tsp of oil in a non-stick pan. When sizzling, add the Halloumi Batons – turning regularly until golden brown – for approximately 4 minutes.
  3. In a large bowl, toss together chickpeas, roughly chopped cucumber, diced red onion, and olives. Season with salt and pepper.
  4. In a jar fitted with a lid, combine olive oil, vinegar, lemon juice, parsley, and chilli flakes. Close the jar and shake until emulsified, then season with salt and pepper.
  5. Dress the salad with vinaigrette and place the Halloumi Fries on top. Enjoy!
